Lemon Bluberry Cupcakes

I am having so much fun reading all of the cookie cutter guesses on the Giveaway post! Some are hilarious, and some of you got all of them. I am not sure the exact day I will choose a winner but I am thinking next Monday. I can't wait to see who wins!

I made some yummy lemon blueberry cupcakes yesterday thanks to Pinterest, and I thought I would share the recipe!


Lemon Blueberry Cupcakes
Recipe from Annie's Eats


For the Cake:

3/4 Cup plus 2 tbs. all purpose flour, divided
3/4 Cup cake flour
1 1/2 tsp. baking powder
1/4 tsp. salt
8 tbs. unsalted butter, at room temperature
3/4 Cup plus 2 tbs. sugar
Zest of one lemon
2 large eggs at room temperature
1 tsp. vanilla extract
2 tbs. lemon juice
1/2 Cup plus 2 tbs. milk, room temperature
1 cup fresh blueberries


For the Frosting:

8 ounces cream cheese
5 tbs. unsalted butter at room temp.
3 Cups confectioners sugar, sifted
1 tbs. freshly squeezed lemon juice
Zest of one large lemon
Extra blueberries for garnish


Preheat the oven to 350˚ F. Line cupcake pans with paper liners. In a medium bowl, combine the ¾ cup all-purpose flour, the cake flour, baking powder and salt; whisk together and set aside. In the bowl of an electric mixer, combine the butter, sugar and lemon zest. Beat together on medium-high speed until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, blending well after each addition. Beat in the vanilla and lemon juice. With the mixer on low speed, mix in half of the dry ingredients just until incorporated. Blend in the milk. Mix in the remaining dry ingredients, beating just until incorporated.

In a small bowl, toss the blueberries with the remaining 2 tablespoons of all-purpose flour. Using a spatula gently fold the berries into the cake batter. Divide the batter evenly between the prepared liners, filling each about ¾ full. Bake 20-22 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pans 5 minutes, then transfer to a wire rack to cool completely.

To make the frosting, combine the cream cheese and butter in the bowl of an electric mixer. Beat on medium-high speed until well combined and smooth, about 2-3 minutes. Mix in the lemon juice and lemon zest. Gradually beat in the confectioners’ sugar until totally incorporated, increase the speed and then beat until smooth. Frost cooled cupcakes as desired. (I used a large, unlabeled star tip to frost these cupcakes.) Garnish with fresh blueberries.


I also filled my cupcakes with lemon curd. SO good. These are perfect for a breakfast muffin if you leave off the icing.

Cherry Blossoms & 7UP Biscuits

I finished off the week with a set of Cherry Blossom cookies for a bridal shower my SIL is helping host. LOVE these colors!

Last night, I posted a picture of these 7UP biscuits on Instagram and I had a handful of people asking for the recipe, so here it is!

7UP biscuits


Ingredients
2 Cups Bisquick
1/2 cup sour cream
1/2 cup 7UP
1/4 cup butter

Melt half of your butter in a baking dish. A 9 inch pie plate or 8x8 baking dish is ideal, but any size works! Mix your Bisquick and sour cream in a bowl until combined. Add your 7UP.
Sprinkle your counter surface with Bisquick and flatten out your dough to around 1-1 1/2 inches thick. Cut into small squares, place in your pan and bake at 425 degrees for around 8-10 minutes.

If you are having Italian for dinner, sprinkle some Italian seasoning and Parmesan on top before you bake. YUM!

UP & A Flashback

So, who doesn't love the movie UP?! We watch it often at our house and I'm pretty sure Jason and I love it as much as the kids do. When I was asked to do some cookies for an UP themed party, the first thing that popped into my head was; Carl. The sweet old man that steals your heart because he's such a grump, ha! So after some brainstorming I came up with a fun set:

Carl, Russell, a balloon bouquet, and "the" mailbox.

I loved every second of these and was sad to send them off to TX!

And just because I can't help myself, I found some pictures my sweet friend Rachel took of the kids around Taylor's 1st birthday.




I cannot believe we have a four year old and an almost 2 year old. We are SO blessed.

Thomas Train

My sweet friend Rachel asked me to make some cookies for her little boys birthday last week. Brady turned 3 and they celebrated with a Thomas Train party. Even though Ryan and Rachel moved to California, I am so happy I was able to be part of this fun day!




Can you guess what cutter I used for Thomas?

If you guessed a wedding cake cutter you are right!!! This is the Wilton wedding cutter set. I'm pretty sure I picked mine up at Wal Mart about a year ago.

It worked perfectly!

I used an "X" cutter from my alphabet set for this cookie. I thought this cookie was a fun addition to the set.

Catch Up

I am catching up on some orders from the past couple of weeks. All of them are so different, but so fun!

Girls Night Out

These were for a fun girls night out. Sweet Meredith asked me to do these and I really wanted to stuff myself in the box and go with these cookies because I am pretty sure she and I could be good friends :).

Batman

These were for sweet Hudson who is having a Batman birthday party. I love doing anything superhero, and I think these colors are so fun together!

Diego and Boots

These were for another sweet Hudson who had a Diego jungle themed birthday. This was my first time to do Diego and Boots. I think boots is my favorite :).

Housewarming

I was asked to do these for a family who had just moved into a new house. I was so excited about using my house and key cutter for the first time. I thought they both turned out so cute, and the keys shipped and arrived in one piece!

WWE

When I was asked to do these I was excited because this was something different. I used the design of the traditional WWE and changed it to a "C" for the birthday boys initial. I also put his name on a wrestling ring. I also did a referee shirt because I know that the ref stands in the middle and raises the winners hand (?!? I had to do some research to do these, I have never watched WWE).

Bubble Guppies
Lastly for the cookies I did more Bubble Guppies. I bet I turn down at least 3 orders a week of these. I guess they are hard to come by?!


And on a personal note, we have had a big month at our house. Taylor has been potty trained for one month! She has done so well, has only had one public accident, and stays dry during nap time and at night. I cannot believe this sweet girl will be 2 at the end of next month! We love you sweet T.


And little man, sigh. If you you follow me on Instagram and Twitter you have already seen this so I'm sorry, but I couldn't resist putting it on here. This boy knows how to steal your heart and steal it fast!

Winnie the Pooh and Jungle Animals

I always love trying something new, so I was super excited when Jason's sweet cousin asked me to do some the Winnie the Pooh cookies for her daughters birthday.


Sadly I didn't include Piglet because I was afraid his ears would break during shipping, but I did make these cute guys;


Winnie, and of course Eeyore


And Pooh's honey pot.

*Cookie Decorators: I used my Pot of Gold cookie cutter from St. Patricks day for the honey pot. Keep an open mind with your cookie cutters, it is amazing all of the ways you can use one cutter!
I also did some bees just to add some fun (you can see them in the first pic I posted).
Now I need someone to order more of these and let me do Piglet!

After I finished up my Winnie the Pooh cookies, I got to work on a sweet set of jungle animals for Cooper's first birthday. When Amber sent me the invitation I fell in love with the sweet animals on the invite and I knew I wanted to make the cookies match the invite.

If you're wondering how I got these shapes I hand cut them all. Yes, every single cookie. I made templates out of carstock; I will definitely do a tutorial on this. It is time consuming, but you can make any shape you want!
